Very Berry Gummies

Here is a low carb take on classic gummy bears. Made with a few ingredients, they take only minutes to prepare. They’re also very versatile so you can play around with flavours and chewy - which is a good thing with gummies.

  • 60 g raspberries
  • 240 ml unsweetened almond milk
  • 3 drops stevia optional
  • 3 tbsp gelatin powder

  • Add the raspberries to a blender along with half a cup of almond milk and the honey, adding more or less as desired. Blend well to combine.
  • Add the remaining milk to a small saucepan and heat through gently until hot but not boiling. Sprinkle the gelatin powder over the hot milk and whisk immediately until smooth and well combined.
  • Remove the milk from the heat. Place a fine mesh sieve over the gelatin milk mixture. Pass the fruit mixture through the sieve into the warm milk, discarding any seeds. Whisk well to combine.
  • Pour the mixture into individual gummy bear moulds. Transfer to the fridge for 20 minutes to chill and set firm. Release the gummies from the moulds and keep refrigerated in an airtight container.

You can use any moulds you prefer, making larger or smaller gummies as desired.
