  • 320 g mascarpone cheese
  • 180 ml double cream (heavy cream)
  • 250 g strawberries
  • ½ lemon zested
  • 2 tsp stevia optional

  • Puree the strawberry in the food processor.
  • Whip the cold double (heavy) cream with stevia until soft peaks form. Set aside.
  • Whip the mascarpone cheese with lemon zest until it reaches a stiff peak.
  • Fold the whipped cream into the whipped mascarpone. Then add strawberry puree gradually and continue to fold.
  • Divide the mousse into the dessert cups.
  • Rest it in the refrigerator, and chill until set.

Adapt the sweetness to suit your own tastes by using more or less stevia. You can leave it out altogether if you prefer to avoid sweeteners and instead reduce your sweetness palette and sweet cravings.
