Ingredients

For the Chicken

  • 500 g chicken breast cut into strips
  • 2 cloves garlic minced
  • 2 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried mint
  • ¼ tsp sea salt
  • tsp black pepper

For the Salad

  • 12 kalamata olives sliced
  • 2 tbsp extra virgin olive oil
  • 1 small cucumber diced
  • 1 large tomato diced
  • 1 tbsp lemon juice
  • 1 iceberg lettuce leaf
  • ½ medium red onion finely sliced

For the Tzatziki

  • 2 tsp lemon juice
  • 1 clove garlic minced
  • 185 g Greek yoghurt (yogurt)
  • ½ small cucumber grated
  • ½ tbsp extra virgin olive oil
  • ½ tbsp fresh mint chopped
  • salt and pepper to season

Instructions

  • Add the grated cucumber to a small bowl with a pinch of salt and toss to combine. Set aside whilst you prepare the chicken.
  • To prepare the chicken, add the olive oil, lemon juice, garlic, oregano, mint, salt and pepper to a shallow mixing bowl. Stir together well to combine.
  • Add the chicken pieces to the marinade, cover and refrigerate for an hour.
  • Preheat the oven to 200°C (400°F), 180° (350°F) for fan assisted.
  • Arrange the marinated chicken pieces across a shallow oven tray and bake for 15 minutes or until the chicken is completely cooked through (this will depend on the thickness of your chicken strips).
  • To prepare the tzatziki, take the grated cucumber and strain away any excess liquid. Add to a mixing bowl with the remaining tzatziki ingredients and stir together well to combine.
  • Add all the salad ingredients except for the lettuce to a mixing bowl and toss to combine.
  • Divide the chicken, salad and tzatziki into four portions. Arrange the tzatziki on a bed of lettuce to serve.
