Souvlaki Chicken - Keto Meal Prep
This simple chicken meal prep is packed with classic Mediterranean flavours and is a great way to jazz up weekday lunches. Each element of the recipe can be prepared in advance to be portioned into individual lunches and will keep in the fridge for up to three days.
Ingredients
For the Chicken
- 500 g chicken breast cut into strips
- 2 cloves garlic minced
- 2 tsp dried oregano
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp dried mint
- ¼ tsp sea salt
- ⅛ tsp black pepper
For the Salad
- 12 kalamata olives sliced
- 2 tbsp extra virgin olive oil
- 1 small cucumber diced
- 1 large tomato diced
- 1 tbsp lemon juice
- 1 iceberg lettuce leaf
- ½ medium red onion finely sliced
For the Tzatziki
- 2 tsp lemon juice
- 1 clove garlic minced
- 185 g Greek yoghurt (yogurt)
- ½ small cucumber grated
- ½ tbsp extra virgin olive oil
- ½ tbsp fresh mint chopped
- salt and pepper to season
Instructions
- Add the grated cucumber to a small bowl with a pinch of salt and toss to combine. Set aside whilst you prepare the chicken.
- To prepare the chicken, add the olive oil, lemon juice, garlic, oregano, mint, salt and pepper to a shallow mixing bowl. Stir together well to combine.
- Add the chicken pieces to the marinade, cover and refrigerate for an hour.
- Preheat the oven to 200°C (400°F), 180° (350°F) for fan assisted.
- Arrange the marinated chicken pieces across a shallow oven tray and bake for 15 minutes or until the chicken is completely cooked through (this will depend on the thickness of your chicken strips).
- To prepare the tzatziki, take the grated cucumber and strain away any excess liquid. Add to a mixing bowl with the remaining tzatziki ingredients and stir together well to combine.
- Add all the salad ingredients except for the lettuce to a mixing bowl and toss to combine.
- Divide the chicken, salad and tzatziki into four portions. Arrange the tzatziki on a bed of lettuce to serve.
