Persian Cucumber Salad

A wonderful recipe to feel the freshness of summer and nourish your soul: Persian Cucumber Salad. Fresh diced salad combined with delicate herb and zesty lemon flavours. Serve this salad with any main dish or as the base of your lunch time meal.

Ingredients
  

  • 4 Persian cucumbers
  • 2 medium tomatoes
  • 1 medium onion
  • 90 ml extra virgin olive oil
  • 2 tbsp lemon juice freshly squeezed
  • ½ tbsp lime juice freshly squeezed
  • 1 tbsp fresh mint
  • 1 tbsp fresh parsley
  • 1 tbsp fresh basil
  • 40 g almonds or walnuts
  • sea salt

Instructions
 

  • Wash and drain ingredients.
  • Cut onion and tomatoes into .5 cm (1/5 inch) fine cubes and place in a large mixing bowl.
  • Trim the cucumber ends then dice into .5 cm (1/5 inch) cubes, adding to the large bowl.
  • Next finely chop the fresh herbs and crush the almonds or walnuts, adding them to the bowl.
  • Gently mix all the ingredients until combined.
  • Whisk the lemon juice, lime juice, olive oil and salt into a vinaigrette.
  • Just prior to serving pour the vinaigrette over the salad and gently mix.
