Low Carb Fish Stew with Cauliflower Rice

Pollock is a lovely fish, one that is often overlooked. It has a mild taste with chunky white flesh and is also a good source of omega-3 fatty acids.
Here is a classic fish stew recipe, that is easy to cook and packed with flavour.

Ingredients
  

  • 2 pollock (pollack) fillets, cut in medium cubes (approx. 125g each)
  • 1 large red bell pepper chopped in medium cubes
  • 2 tbsp extra virgin olive oil
  • 150 ml fish stock
  • 150 g tomato passata
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 3 tbsp unsalted butter
  • 300 g cauliflower rice

Instructions
 

  • Stir chopped onion and bell pepper in a large frying pan (skillet) with olive oil on medium heat, for approximately 5 minutes.
  • Add butter to the pan and cook the pollock fillets for 5 minutes.
  • Next, add minced garlic and stir for а couple of minutes.
  • Pour the passata and fish stock into the pan along.
  • Stew everything together on low heat for about 10 minutes more.
  • Serve with cauliflower rice.
