Low Carb Dirty Rice

Dirty rice, also called Cajun Rice, originates from Louisiana and other Southern USA states. Our Low Carb Dirty Rice includes minced meat, bell pepper, celery, spring onions along with a blend of herbs and of course we replace the white rice with nutrient dense cauliflower. A tasty and simple to knock together weekday meal that can easily be adapted to suit your own preferences, we are sure that you will love this dish!

Ingredients
  

  • 1 tbsp beef tallow or diet compliant fat of choice
  • 350 g minced beef (ground beef) organic
  • 1 medium red onion peeled and finely diced
  • 1 large celery stick diced
  • 1 small carrot organic, washed and finely diced
  • 1 small green bell pepper finely diced
  • 2 large spring onions (green onions) diced
  • 1 clove garlic peeled and crushed
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 150 g chicken livers organic, finely chopped and sinew removed
  • 400 g cauliflower rice
  • 240 ml beef stock
  • a pinch of sea salt

Instructions
 

  • Heat the tallow in a large frying pan (skillet) over a medium/high heat. Add the minced beef (ground beef), diced onion, celery and carrot. Cook until the beef is browned all over and the vegetables have started to soften.
  • Add the diced spring onions (green onions), garlic, oregano and thyme. Stir well to combine and cook for a minute or so more until the garlic is tender and fragrant.
  • Add the liver to the frying pan (skillet). Stir well and cook for just a few minutes.
  • Add the cauliflower rice and a good pinch of sea salt. Stir well.
  • Add the beef stock and bring to a gentle boil. Allow the stock to simmer over a medium heat for a few minutes until completely evaporated and the rice is tender. Serve hot.
