Low Carb Creamy Salmon with Spinach

Beautiful pan-fried salmon fillets with a side of fresh, spring spinach greens. This dish is bursting with great nutrition and flavour and is ready in under 30 minutes, making it perfect for a simple healthy weekday dinner.

Ingredients
  

  • 2 salmon fillets (approx. 130g ea)
  • 200 ml double cream (heavy cream)
  • 2 cloves garlic minced
  • 300 g spinach
  • 2 tbsp extra virgin olive oil
  • salt and pepper to season

Instructions
 

  • Warm olive oil in a medium frying pan (skillet), and cook both sides of the salmon fillets for approximately 5 minutes on each side until cooked through and slightly golden on the outside.
  • Cut spinach stems and leaves into small pieces approximately (2cm) and add to the salmon in the pan.
  • Next add heavy cream and minced garlic, simmering on low heat for 5 minutes more.
  • Remove from the heat, season to taste and serve.
