Low Carb Baked Sea Bass with Lemon Garlic Sauce

Cooking seafood in your own kitchen can be very satisfying! This recipe is a perfect go to for taste and just the right amount of sourness.
Our seabass with tangy light dressing works well with a range of low carb sides and is really quick to prepare and cook. Serve with sauteed spinach, celeriac puree, artichoke, asparagus, cabbage or salad, or our sauteed green beans and cauliflower puree.

Ingredients
  

  • 2 sea bass fillet (approx. 100g each)
  • 120 g green beans
  • small cauliflower
  • 90 ml extra virgin olive oil
  • 2 tbsp fresh parsley finely chopped
  • 2 tbsp double cream (heavy cream)
  • 30 g unsalted butter
  • 1 tbsp capers
  • 1 ½ tsp wholegrain mustard
  • ½ lemon juiced
  • ½ tsp garlic puree
  • salt and pepper to season

Instructions
 

  • Brush 1 tablespoon of olive oil on each side of the sea bass and sprinkle salt and pepper then place the sea bass on the baking tray with greaseproof paper (waxed paper), skin side on top. Bake the sea bass at 180˚C (350 °F) in a preheated oven for 14 minutes.
  • While the sea bass is baking, simmer the cauliflower in a pan of hot water on a medium heat until tender (about 10 minutes). Drain the cauliflower thoroughly then place in a bowl, add cream and 1 tablespoon of butter, pepper and salt. Puree using a hand-held blender until it reaches a smooth consistency.
  • In a separate pan of hot water, simmer the green beans for 4-5 minutes on medium heat. Drain the green beans until all water is removed then serve topped with remaining butter to melt over the beans. Season with salt and pepper.
  • Whisk the lemon juice, remaining olive oil, wholegrain mustard, garlic puree, and salt until well combined, about 2 minutes, and then add the capers in dressing.
  • Take the sea bass out of the oven and place each on a serving plate. Drizzle the dressing over the sea bass, then sprinkle with finely chopped parsley on top.
  • Serve with cauliflower puree and sauteed green beans.
