Keto Marinara Meatballs with Sautéed Garlic Spinach

A quick and delicious meal, these marinara meatballs with sautéed spinach will surprise you! Very easy to make, with no special techniques needed, you will enjoy an amazing meal without complications. The marinara sauce meets perfectly with the meatballs. Also, the touch of garlic gives identity to the spinach that is delicate and intense at the same time. A meal to enjoy with family or to freeze in individual portions. Serve with cauliflower rice or a side salad. The perfect match!

Ingredients
  

  • 1.2 kg tinned (canned ) chopped tomatoes
  • 1.5 kg minced beef (ground beef) 70% lean meat, 30% fat
  • 200 g raw pork liver (or lamb)
  • 4 cloves garlic minced
  • 300 g spinach chopped
  • 75 ml extra virgin olive oil
  • 15 g fresh basil chopped
  • 2 tbsp dried oregano
  • 2 tsp dried Italian herbs
  • ½ tsp paprika
  • 1 tsp salt more to taste
  • black pepper to season
  • warm water as needed

Instructions
 

  • Put liver in a food processor and process for 30 seconds.
  • In a bowl, combine minced (ground) beef, liver, half of the basil leaves, oregano, paprika, and ½ tsp salt. Combine using hands and make small balls. Set aside.
  • In a large saucepan, heat half of the olive oil over medium-high heat (wait about 30 seconds) and add in one-third of the garlic, fry for 30 seconds. Add in tomatoes, Italian herbs and remaining salt. Bring it to a boil (about 3-5 minutes) and when bubbling, carefully place meatballs inside the sauce. Let them cook, turning them every 2 minutes, taking care to not break them (might take around 15-20 minutes). Add some warm water to the sauce if it looks too dry, adjust thickness as needed.
  • In the meantime, heat the remaining olive oil for 30 seconds in a large frying pan (skillet), add in the remaining garlic and fry for about 30 seconds. Use medium-high heat.
  • Stir in spinach leaves, stirring frequently, sauteeing them, for about 3 minutes.
  • Season spinach with salt and black pepper to taste.
  • Serve with cauliflower rice or a fresh side salad. You can separate it into portions and freeze them for up to one month. Remember to fully cook the beef!
