Our Carb Dodging Lamb Pilaf recipe is based on a traditional Indian rice dish, but instead of boring white rice we are using nutritious low carb cauliflower rice sauteed with spices and cooked in tasty stock. A lovely dish to share with family and friends and ready in under 30 minutes.

  • 1 tbsp tallow or coconut oil
  • 1 medium red onion finely diced
  • 2 cloves garlic thinly sliced
  • 500 g minced lamb (ground lamb) grass-fed
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground cinnamon
  • a pinch of sea salt
  • 400 g cauliflower rice
  • 240 ml chicken stock
  • ½ medium lemon

Optional Serving Ideas

  • pomegranate seeds
  • flaked almonds toasted
  • pine nuts toasted
  • fresh coriander (cilantro)
  • plain yoghurt (yogurt)


  • Heat the fat in a large frying pan (skillet) over a low/medium heat. Add the onion and garlic, sweating gently for a few minutes until tender and fragrant.
  • Add the minced lamb (ground lamb) to the pan along with the dried spices and a good pinch of salt. Stir well to combine and cook the lamb until browned all over.
  • Add the cauliflower rice to the pan and stir well.
  • Add the chicken stock to the pan and bring to a boil. Reduce down to a simmer and continue to simmer until all the liquid has evaporated, stirring occasionally.
  • Divide the pilaf between individual serving bowls, fluff with a fork to separate the grains, and drizzle each with a squeeze of lemon juice. Garnish with optional toppings to serve.
