Keto Garlic Roast Beef Salad

Garlic Roast Beef Salad is a phenomenal lunchtime dish and brilliantly simple to prepare. Prepare the beef and dressing in advance so that all you have to do is combine the salad ingredients, and you are ready to go! This makes the delightful salad a perfect choice for weekday lunches.

Ingredients
  

  • 700 g beef top rump or sirloin roast joint
  • 400 g rocket (arugula) leaves
  • 400 g lettuce
  • 300 g radishes finely sliced
  • 4 cloves garlic minced
  • 1 tsp mustard seeds whole or powdered
  • 30 g fresh parsley chopped
  • 1 lemon juice only
  • 180 g parmesan cheese grated
  • 240 ml extra virgin olive oil
  • 300 g walnuts chopped
  • salt and pepper to season

Instructions
 

  • Season beef with salt, pepper, garlic, mustard seeds and 3 tablespoons of olive oil. Rub the meat with the spices and let marinate for 5 minutes.
  • Preheat the oven to 220°C (425°F).
  • Heat a frying pan (skillet) to med-high temperature. Using tongs, carefully brown each side of the meat on high heat, turning every minute for up to 3-4 minutes.
  • Remove meat from the frying pan (skillet), sprinkle with parsley, and cover in baking foil (aluminium foil). Transfer meat to a baking dish or casserole and place in the oven to roast for 15 minutes if using steak (see cooking times below for beef joints).
  • Remove meat from the oven. Let rest for 5 minutes. Then remove from baking foil (aluminium foil), and cut into thin slices.

Preparing the Salad

  • While the beef is cooking and cooling, we can prepare the salad. Combine rocket, lettuce, radish, walnuts and parmesan in a salad bowl. Toss to combine. Set aside.

Preparing the Salad Dressing

  • In a separate jug or jar, combine salt, pepper, lemon juice, and remaining olive oil. Shake vigorously to combine. Store your dressing in an airtight container until ready to drizzle on your salad.

To serve

  • Place sliced beef on top of the salad, warm or cold as preferred, then drizzle with dressing and enjoy.

Notes

Preparation notes:
When planning to enjoy this salad for more than one day, simply prepare the dressing, beef and salad elements separately, combining when serving.  
You can use the suggested meat cuts or any regular steak that you have available. When using thick cuts, the cooking time needs to be increased. When using thinner cuts, it’s necessary to reduce the cooking time to achieve the desired texture.
The estimated cooking time is for a thick cut of meat. However, you can use thinner meat pieces to achieve faster results. If necessary, use multiple steaks to reach the weight in the ingredient list.
As a time reference according to the size of the meat cut:
To achieve rare, it takes around 10 to 15 minutes per 450g (1 pound) of meat
To achieve medium-rare, it takes around 15 minutes per 450g (1 pound) of meat
To achieve medium, it takes around 20 minutes per 450g (1 pound) of meat
