Keto Chicken Noodle Soup

This simple Chicken Noodle Soup is healthy, satisfying and tastes amazing. Warming and nutritious, this makes a great option for lunches and winter evening meals. Ready in around 25 minutes, and really simple to prepare, we hope you enjoy this low carb favourite of ours.

Ingredients
  

  • 1.2 Litre chicken meat stock
  • 2 cloves garlic peeled and thinly sliced
  • 2.5 cm fresh ginger peeled and thinly sliced
  • 1 small carrot sliced into ribbons
  • 2 medium courgettes (zucchini) (approx. 135 g ea), spiralised
  • 250 g cooked chicken meat shredded
  • 3 medium spring onions (green onions) roughly chopped
  • a pinch of sea salt

Instructions
 

  • Add the chicken meat stock to a large saucepan, and bring to a gentle boil. Reduce the stock to a simmer and add the sliced garlic and ginger. Simmer for 5 minutes to soften and release flavours.
  • While the stock is simmering, take a spiraliser or vegetable peeler to prepare courgette (zucchini) strips or spirals and the carrot into wide ribbons, creating a noodle-like effect. Set to one side.
  • Add the shredded/chopped cooked chicken meat to the saucepan. Simmer for a few minutes to heat through.
  • Add the carrot ribbons and sliced spring onions (green onions) to the pan. Add a pinch of sea salt and stir gently. Simmer for a couple of minutes more, until the spring onions, courgette and carrots have just softened and the chicken is piping hot.
  • Divide between individual serving bowls and serve hot.
