These BBQ chicken wings are oven baked until caramelised with extra BBQ sauce for dipping and a side of smokey red cabbage and onion slaw.
Great for Friday nights or for adding to a summer BBQ!

Ingredients
  

For the Chicken wings

  • 6 medium chicken wings
  • 1 tbsp extra virgin olive oil
  • 1 tsp lemon zest
  • 1 clove garlic minced
  • ½ tsp smoked paprika
  • salt and pepper to season

For the BBQ sauce

  • 2 tsp extra virgin olive oil
  • 1 tbsp tomato puree
  • 1 tbsp balsamic vinegar
  • 1 tsp smoked paprika
  • 1 tsp lemon juice
  • 1 tsp soy sauce
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp ground cinnamon
  • ½ tsp horseradish
  • salt and pepper to season

For the Slaw

  • small red cabbage finely sliced
  • 1 tsp lemon juice
  • 1 tsp smoked paprika
  • 1 tbsp mayonnaise
  • ½ medium red onion finely sliced
  • ½ tsp horseradish
  • salt and pepper to season

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Add the chicken wings to a bowl with the olive oil, lemon zest, paprika and garlic. Season to taste and massage the oil and seasoning into the chicken.
  • Arrange the chicken across a shallow oven tray and transfer to the oven to bake for 15 minutes until the skin begins to crisp.
  • Whilst the chicken is baking, add all the BBQ sauce ingredients to a small mixing bowl and stir well to combine. Reserve 1.5 tablespoons of the sauce to one side and set aside the remaining sauce for dipping.
  • Brush the reserved BBQ sauce all over the chicken wings and return to the oven to bake for a further 10-15 minutes, turning halfway through. The chicken should be golden and caramelised around the edges and completely cooked through.
  • Whilst the chicken is cooking you can prepare the slaw. Add all the slaw ingredients to a serving bowl and stir well to combine. Set aside until ready to serve with the chicken and bbq sauce.
