Keto Aubergine Turkey Pizza

Probably the tastiest of keto pizzas, mini aubergine pizza. Feel as though you have arrived in Southern Italy with the mediterranen flavours of baked aubergine, rich tomato sauce and light mozzarella. Add next capers, grilled turkey and olives to create an unforgettable taste.

Ingredients
  

  • 2 medium aubergine (eggplant)
  • 2 tbsp extra virgin olive oil
  • salt and pepper to season

For Sauce

  • 200 g tomato puree
  • 2 tbsp water
  • 2 tsp vinegar
  • 1 ½ tbsp extra virgin olive oil
  • 2 cloves garlic crushed
  • 3 tsp dried oregano
  • salt and pepper to season

For Topping

  • 320 g turkey breast
  • 60 ml extra virgin olive oil for marination and grill
  • 30 g capers
  • 18 black olives sliced
  • 18 green olives sliced
  • 300 g mozzarella cheese grated
  • salt and pepper to season
  • fresh basil optional

Instructions
 

  • Cut the aubergines (eggplants) lengthwise into 1 cm (1/2 inch) thick slices.
  • Meanwhile, cut the turkey breast into 6cm (2.5 inch) squares, approximately 2cm (3/4 inch) thickness. Place turkey breast between two pieces of cling-film (plastic wrap). Pound the turkey breasts to an even 0.5 cm (1/5 inch) thickness. Brush turkey breasts with olive oil and season with salt and pepper. Set aside.
  • Heat extra virgin olive oil in a pan then add tomato puree, water, vinegar, crushed garlic, oregano, salt, and pepper. Cook until it boils. Set aside.
  • Meanwhile, heat the grill pan and cook the marinated turkeys until there are grill marks on both sides. Slice the turkeys into small pieces for topping. Set aside.
  • Brush aubergines (eggplants) with olive oil and season with salt and pepper. Cook the aubergines (eggplants) in the same grill pan until there are grill marks on both sides and until the colour changes. Place the aubergine (eggplant) slices on a baking tray lined with greaseproof paper (waxed paper).
  • Heat the oven at 200° C (400° F). Spread the tomato sauce thinly on the eggplant slices. Next add turkey pieces, olives and capers, then sprinkle mozzarella on top. Bake in the oven for 15 minutes or until the cheese changes colour slightly.
  • Take out of the oven and drizzle with olive oil, serving warm topped with fresh basil.
