Ingredients
  

  • 960 ml chicken meat stock or broth
  • 1 small cauliflower (approx. 230g ea), cut into florets
  • 1 medium white onion peeled and diced
  • 250 g cooked chicken meat including fats and any reserved gelatinous meat if you prepared your own stock
  • 1 clove garlic peeled and thinly sliced
  • sea salt

Instructions
 

  • Add the chicken meat stock to a large saucepan or Dutch oven. Bring the stock to a boil. Reduce to a simmer and add the prepared cauliflower and onion. Simmer for 5 minutes to start softening the vegetables.
  • Add the cooked chicken and any reserved fatty/gelatinous meat to the saucepan. Add the garlic and season with a generous pinch of sea salt. Simmer the soup for 10-12 minutes more. The vegetables should be soft and the chicken hot through.
  • Remove the soup from the heat. Remove a good ladle full of the cooked chicken meat from the soup (about 80 ml or 1/3 cup per serving) and set aside. Carefully use a handheld stick blender to blend the soup until smooth and creamy. You can also process the soup in a freestanding blender. Allow the soup to cool a little, then carefully transfer to a blender jug and purée until velvety smooth.
  • Divide the creamy soup between individual serving bowls. Stir through the reserved cooked chicken pieces to serve.
