Coriander and Garlic Flatbreads

This low carb flatbread pairs well with other recipes, like pates and dips. It's also very handy to make in advance for an occasion. Tasty and easy, these flatbreads will keep you away from high carb bread and crackers, no problem.

Ingredients
  

  • 1 small cauliflower (approx. 250g ea) cooked, mashed, drained of any excess liquid
  • 110 g almond flour
  • 2 small eggs
  • ½ tsp sea salt
  • 2 tbsp garlic oil
  • 4 tbsp fresh coriander (cilantro) roughly chopped
  • 2 tbsp extra virgin olive oil

Instructions
 

  • Preheat the oven to 200°C (400°F), or 180°C (350°F) for fan assisted. Add the mashed cauliflower, salt, garlic oil, and coriander (cilantro) to a food processor. Crack the eggs and add them to the food processor. Blend to combine. You may add more or less coriander or salt to suit your personal preference.
  • Add the almond flour ¼ cup at a time and blend together until a dough forms in the food processor. This should not be too dry. You may not require the full amount of almond flour - judge by the consistency of the dough. Divide the dough into eight even-sized portions with your hands.
  • Line a shallow oven tray with baking paper. Roll the dough into balls and arrange across the baking tray. Lightly dust the balls of dough with a little extra flour and flatten them with your palms. Press the dough into disc shapes about 1/2 centimetre thick and roughly 10cm wide. Brush the discs with the olive oil.
  • Transfer to the oven to bake for 20-25 minutes or until golden brown and cooked through.
  • Optionally, once cooked, lightly oil a griddle pan over a medium/high heat. Once hot, add two flatbreads to the skillet/griddle pan at a time to create griddle lines and create a slightly charred flavouring.
