Easy Chocolate Keto Mousse

Easy Chocolate Keto Mousse

A decadent, light, foamy mousse that won’t blow your carb limit.
Chocolate and mascarpone cream blend together to make a wonderfully textured mousse in minutes. 
This recipe is easily adjusted to suit your own tastes by using your preferred chocolate or increasing or decreasing the amount sweetener to your liking.

Ingredients
  

  • 240 g mascarpone cheese cold
  • 180 ml double cream (heavy cream) cold
  • 1 ½ tbsp cocoa powder
  • 70 g organic dark chocolate 85% cocoa
  • 2 tsp stevia

Instructions
 

  • Cut the dark chocolate into small pieces and melt with 1.5 tablespoons of double (heavy) cream over a pan of water, on a low heat. Do not overheat the water, simmer gently stirring the chocolate until melted.
  • Whip the remaining cold double (heavy) cream with stevia until soft peaks form. Set aside.
  • Whip the mascarpone cheese until it reaches a stiff peak. Then, add the melted chocolate and cocoa powder and whisk together.
  • Fold the whipped cream into the whipped mascarpone cheese and dark chocolate mixture.
  • Divide the chocolate mousse into the dessert cups.
  • Rest it in the refrigerator, chill until set.
