Cauliflower Base Keto Pizza

Pizza has become a modern day classic recipe, to be enjoyed any day of the week as an excellent lunch or an outstanding slice of dinner. If you’re worried that being on Keto means no pizza at all, just take a look at this recipe! The golden cauliflower crust adds flavour, fibre and nutrients to replace the white flour traditional base.  The new base combines perfectly with the cheesy flavours and passata, while shredded pesto chicken gives the final tasty touch.  Once tried there is no going back!

Ingredients
  

  • 450 g mozzarella cheese (whole milk), grated
  • 600 g boneless chicken thighs chopped
  • 150 g spinach chopped
  • 15 g fresh herbs chopped
  • 30 g fresh basil
  • 75 g tomato passata sugar-free
  • 1 medium cauliflower (approx. 600g)
  • 8 eggs beaten
  • 2 tomatoes chopped
  • 1 clove garlic minced
  • 180 ml extra virgin olive oil
  • ½ tsp paprika
  • 1 tsp parmesan cheese optional
  • salt and pepper to season

Instructions
 

  • Heat 2 tablespoons of olive oil on a frying pan (skillet) for 30 seconds. Then fry chicken for 5 minutes or until browned. Stir in garlic and spinach, cook for 3 more minutes. Season with salt and pepper. Set aside.
  • In a blender or food processor, combine basil and remaining olive oil. Mix to create a pesto sauce, 45 seconds would be enough. Season with salt and pepper to taste. Combine with chicken.
  • In a food processor, add cauliflower. Grate it for about 3 minutes or until small flakes remain.
  • Add the cauliflower to a bowl, stir in the eggs, mozzarella, paprika, some salt and pepper. Mix until all is combined, which might take around 1 minute.
  • Line a baking pan with baking paper (parchment paper), then spread the cauliflower dough over it. Bake in a preheated oven at 180°C (350°F) for 20 minutes or until slightly browned.
  • Top cauliflower crust with tomato passata, chicken and spinach. Return to oven for additional 10 minutes.
  • Top with tomatoes, parmesan cheese, and fresh herbs before serving. Enjoy!
